Crisp, crackerlike store-bought lavash serves as an easy no-prep crust for this fresh, flavorful shrimp and artichoke pizza.
WHY THIS RECIPE WORKS: Using store-bought lavash, a Middle Eastern flatbread, rather than traditional pizza dough gave this crust a crisp, crackerlike texture, and since the lavash is ready-made, the whole meal came together in less than 30 minutes. To top the pizza, a combination of shrimp, artichoke hearts, garlic, and mozzarella and Parmesan cheeses made it a simple but sophisticated dinner. Lavash, a flatbread commonly used in Middle Eastern cooking, can be found near the tortillas in the supermarket. Because lavash can vary greatly in size, you may need to trim the bread. 12 ounces medium shrimp (41 to 50 per pound ) , peeled ,deveined , and removed
¼teaspoon salt2 garlic cloves, minced
1 (11 by 8-inch) piece lavash bread
4 ounces mozzarella cheese, shredded (1 cup)
2 tablespoons grated Parmesan cheese
1. Adjust oven rack to middle position and heat oven to 425 degrees. Pat shrimp dry with paper towels. Combine shrimp, artichokes, 1 tablespoon oil, garlic, salt, and pepper in bowl.
2. Brush remaining 1 tablespoon oil over both sides of lavash. Arrange lavash on baking sheet and bake until browned and crisp, 5 to 7 minutes.
3. Sprinkle mozzarella and Parmesan evenly over lavash. Top with shrimp mixture and bake until shrimp are opaque throughout and cheese is melted, 6 to 8 minutes. Slice and serve.
