Island Coconut Shrimp

¾ cup panko breadcrumbs

½ cup shredded unsweetened coconut

2 tsp. lime zest

1 tsp. salt

¼ tsp. black pepper

2 eggs

18 shrimp, peeled, deveined, and tails left intact

Mix the panko, coconut, lime zest, salt, and pepper in a medium shallow bowl.

Whisk the eggs in another medium bowl. Add the shrimp to the bowl with beaten eggs and toss to coat.

Island Coconut Shrimp

Working with 1 shrimp at a time, remove shrimp from beaten eggs and turn to coat each one in panko mixture.
Spritz with oil on both sides of the shrimp.
Place shrimp in air fryer basket in a single layer.
Bake the shrimp in batches at 370 degrees for 8–10 minutes, or until they are cooked through and golden. (This depends on the size of your shrimp.)
